I'd like to get one of the games that are available in America (as opposed to importing), so here's my ideas. I've heard that Gundam vs. Zeta is good, but in Encounters in Space, I hear you can use the Dendrobium Orchis and some RX-78 variants. Maybe I should get both?
EDIT: Are there any real-time (as opposed to a turn-based RPG) Gundam games that have a playable Sazabi + Nu Gundam?

Gundam vs. Zeta Gundam is a nice game, probably the best I've played... but then I haven't played all that many.

If you're not a Gundam fan, most are passable at best. (but I know you are)
I personally prefer Federation vs. Zeon (PS2) over Gundam vs. Zeta Gundam, mostly because it felt more accurate and flowed smoother, if that makes sense. GvZG felt like it was trying to do too much, and while I enjoyed it, I enjoy FvZ more.
Encounters in Space is an odd one. The controls and setup are annoying, but if you get past those, it's pretty cool.

Yeah, /m/ recommended FvZ as well. I think I'll go with that one.

To answer your Nu Gundam and Sazabi question, there aren't any current US games that have them in other than Dynasty Warriors Gundam 2.
If you went for import games too, then there's Climax UC, and Another Century's Episode 2 and 3 that have Nu and Sazabi (IMO the funnels on both operate much better in ACE 2 and 3 than the other games). Hope that helps.

I have all the Gundam games released and all have things I like and do not like. I have a soft spot for Journey to Jaburo just because of this (http://www.youtube.com/watch?v=dx0r4sfheG0) and you can Unlock the Kaempfer. Zeonic Front is also good, namely because you can be one shotted. It also has the most kick *** opening movie ever (http://www.youtube.com/watch?v=xqoy8bItuqI).
