Is Kouta working on the show that hard that he cant finish the manga, or is he diligintly working on Hellsing volume 8? If not known which is highly doubtful any thoughts? Also do you watch Pee Wee on Adult Swim*random but i love that show*?

The manga author generally has little involvement with the production of an anime series based on their work.
Hellsing has been plagued by delays throughout its run, anyway.

Volume 8 is already out in Japan. If you want to read it, you'll have to wait for a translation or you can go and get it already scanlated online.

JUNKY, the manga is still going in Japan; it's not released in volumes originally like in the US, but in chapters. Hellsing is serialized in Shounen Gahousha (Young King OURs) which is a monthly magazine; that means there is one chapter of Hellsing per month in Japan (where most other titles are typically 1 per week).
There were 6 chapters per volume originally, which means that it takes 6 months for there to be enough for a volume release, and that may not even happen immediately after there are 6 to compile. It then became 10 chapters per volume, which means that it takes 10 months to have enough to compile a volume. It's pretty much an average of one volume per year in Japan.
So while Hellsing chapters are still serialized on a monthly schedule in Japan, it seems like we are waiting forever simply because Dark Horse caught up very quickly since they released it in volumes. Volume 8 just came out recently in Japan, so it could be months before we see it translated by DH here in the US, and it'll seem even longer for volume 9 (which has not been released in Japan since there aren't enough chapters to compile a volume 9 yet).
