Wow, I only ever watch one series at a time. Sometimes two if I'm rewatching one with my girlfriend.

Currently for me...Escaflowne. Just finished up episode 6 and am throughly enjoying it so far.

Edit: To actually address the OP's questions...I started it based on a couple recommendations from friends and because the description sounded like something I'd be in to. It's got a lot of what I like all mixed into one story. Fantasy, mecha, romance, swordfighting...

Need to re-watch the Gundam movies, Zeta Gundam, choice parts of Evangelion, and see the whole thing of Castle in the Sky(what I saw of it looked enjoyable) in any time I can spare.
I want to get Macross, Interstella 5555, Char's Counterattack, Gundam 0083 and 8th MS team, and Vandread(iffy on this though) in the fut'cha. If I can actually salvage a life out of this(I'm being dramatic), I may finally try L-Gaim.
That covers that.
Oh, and I'm going to see Gundam 0080 in Japanese (had to watch the dub first since I had no DVD remote to change the options and my computer was screwy)

I've actually watched a few bits of it. It's fairly good from what I have seen. The animation is drawing me in, and I feel my next purchase will probably be of this series.

And it seems dark... as is my obvious preference.

I'm in the process of watching DNA2. I'm glad U.S. Manga Corp. doesn't get many series. Their DVD layouts are crap. And I've noticed several spelling/grammar errors in their subtitles. And what little I heard of the dub (on the DVD menus) made me cringe. And for some reason, the screen shots on the DVD covers include screenshots from future volumes.

Yeah I've seen both the Vampire Hunter D movies. Unfortunatly the first was horrible simply because it was that old english dub. The second was okay, it seemed sort of drug out. I liked watching the AMVs for it which hi-lighted the action packed and coolest moments.

Rose of Versailles- I'm completely suprised that I've waited all this time to finally watch it. My friend lent me her cds of the first 24 episodes over the summer. I just recently watched those episodes in a 3 day span. It was very addicting.

Monster- Another great show that I waited so long to check out. Watched the first 12 episodes and I am eager to see more whenever I go back to my friend's house.

Its a great mystery/action anime and I look forward to the next volumes. I just can't wait to find out why Loki was exiled to earth I have a pretty idea why he was.

I think DNA^2 is perfect for a good laugh. I hope you didn't pick it up wanting an epic, stirring plot because you definitely won't get that.

I'm currently watching Orhen Revenge which I've had on the shelf for almost a year. Pretty good follow up to the first series so far with a bit more comedy.

Working on Lupin III Part 2 which is just fantastic. The first few eps were a bit hard to adjust to since the voices were a bit off from the original series and a voice replacement was added as well as slightly altered character designs. Now the episodes seem keep one upping that last and I'm just enjoying the ride. I have so many movies to watch as well.

I'm also watching Aria which I'm about half way through. I like the feel of this show most of all. It's very relaxing and I like the characters. Good stuff up to this point.

Rewatching Utena. I'm enjoying it even more this time around as I'm picking up on things that I wasn't aware of the last time. Love stuff like that and Utena is just an overall great series.

I'll be rewatching lots of Hajime no Ippo as well as starting Dragonball from the very beginning for the 9th time. I'm currently watching Beet the Vandel Buster which i'm really enjoying and since I just finished Zipang (which rocked) I'll be looking for a show that can replace it.

It might very well be your best bet. Zipang is very serious, has no filler and has a GREAT concept in which you would have to be crazy not to like. Your dad may find it very interesting and might be able to relate to it somewhat depending on what kind of experiences he had while serving. I just think that if you were ever going to show your dad who doesn't watch anime something then it might as well be something like this. I'm sure you'll enjoy it as well.
